Eat more salad!
Ok, so this sounds like an obvious one, but let`s take a look at why.

Italian-Style Shepherd's Pie

Prep Time: 20 minutes

Servings: 6


  1 pkg Burgers Morningstar Farms™ Tomato and Basil Pizza Burger

  1 cup chopped onions

  1 1/2 tsp minced, roasted garlic

  1 Tbs vegetable oil

  1 cup sliced carrots

  1 cup sliced mushrooms

  1 cup chopped green pepper

  1 Tbs flour

  1/2 cup vegetable broth

  1/4 cup diced pimientos

  3 cups mashed potatoes

1. Cut MORNINGSTAR FARMS TOMATO AND BASIL PIZZA BURGER patties into pieces. Set aside.

2. In large fry pan, saute onions and garlic in oil. Add carrots, mushrooms and green pepper. Continue cooking and stirring about 3 minutes longer or until vegetables are crisp-tender. Add Veggie Burgers and flour, mixing thoroughly. Stir in broth and continue cooking and stirring until mixture starts to boil. Remove from heat and stir in pimentos. Place hot mixture in shallow, medium-size casserole dish coated with vegetable cooking spray. Top with mashed potatoes. Sprinkle with paprika.

3. Bake at 400°F about 20 minutes or until potatoes are browned. Serve hot.
